Last night for dinner I made meatloaf sandwiches, out of the meat loaf I made on Saturday, and chicken soup out of the chicken I roasted on Sunday. The meat loaf was on the spicy side, as I made it with cayenne pepper and onions. It was solid so it sliced up very nicely. I’ve never made meatloaf sandwiches before, so I wasn’t sure, I made them with cream cheese, but my boyfriend preferred ketchup. The chicken soup came out quite nicely, as I had stuffed the skin of the chicken with sliced garlic and onions before I baked it on Sunday. I added brown rice, carrots, turnips and parsnips to the soup as well, and they all came out very tender. Since it all had a bit of spice to it, we had a beer alongside as well.
